The First Mango of the Year!

I wish I'd taken a picture of it, but it was so small and we were sooo excited! We actually picked a couple the day before yesterday. One was on the ground and something had obviously been chewing on it with VERY long teeth! Probably a possum. Steve totally grossed me out when he said "I'll just cut that part out and eat it anyway." EEEEEEWWWWWWWW YUCK! And that's exactly what he did the next morning! He did wash it well first. But today one of the others that we picked was finally totally ripe. So since we were having fish, Steve and I chopped up a tomato, some fresh pineapple, a bit of red onion, some green pepper, the mango, and made a salsa with it! We added some lime juice and kosher salt too. YUMMY!!! It could have used some cilantro but we didn't have any. :( It was refreshing and delicious with our Mahi and rice! Now THAT'S a diet I can live on! Hehe!
I've been scrapping a lot lately. Mostly stuff for my Design Team obligations. There's the Guest Designer spot for the month of May at My Sketch World (link is in my favs to the right) which I ended up turning into a two-page LO about Noah in the rainforest at Butterfly World. Reveal is May 15th!!!
And then I had the Spice Kit for this month from Scrapdango (link is also in my favs to the right). I altered a picture frame, and created a total of 5 pages with the kit and I STILL HAVE MORE PRODUCT!!! Reveal for Scrapdango is May 15 as well. I'm telling ya these kits totally ROCK!!! And they sell out FAST! Oh! And the National Scrapbooking Day challenges are still active! You can still enter any of them and win great prizes from now until Midnight ET May 9 (which is tomorrow).
I've also almost completed all the pictures from my trip to Virginia last month. Will update the Photobucket slideshow at the top of the blog later tonight. Right now I'm gonna go try to finish the trip pictures and get Steve to dye my hair for me. We are planning our first trip in the car with Baxter tomorrow. I'm not sure we're gonna make it even to Alligator Alley with him, but we'll see how he does tomorrow. It will make for a great story on Monday I'm sure!
